I read ... two dozen[ ? maybe more] potato soup recipes and they all called for cream or milk or butter and just no.

Fried up a pack of bacon, drained nearly all the grease out, then browned the onions/garlic in that. I stripped all the fat off the bacon and chopped it into crumbles/bits -- added on tablespoon of bits to the soup, left the rest for garnish [I actually didn't use the garnish except on soup night, because who needs that much bacon?]

So yeah, I think for a potato soup it was *extremely* lean and tasted like it was full fat ;-)
