Baked Apple Pudding

Ingredients

1/3 cup margarine, softened
1 cup sugar
1 egg
1 cup unsifted flour
1/4 tsp baking soda
1/4 tsp salt
1/4 tsp ground nutmeg
1/4 tsp ground cinnamon
1 tsp vanilla extract
2 cups grated unpared apples
1/4 cup chopped walnuts

8" square baking pan
350 degrees
35 minutes

Combine margarine, sugar and egg in mixing bowl; beat until light. Gradually blend in combined flour, baking soda, salt, nutmeg, and cinnamon. Stir in vanilla, apples, and walnuts. Turn mixture into an ungreased baking pan. Bake at 350 for 35 minutes or until done. Serve warm or cold topped with whipped cream or ice cream.

Makes 8-10 servings

It's so easy! You don't even peel the apples, just grate them. I haven't made this in probably 5 years or more, but I am this year and I'm giving it to my neighbors who have helped in the yard.
